Ingredients of Hainanese Chicken Rice

  1. You need 2 pcs of whole chicken – cut into 4 pcs for each chicken.
  2. It’s 1/2 pc of lemon.
  3. It’s 8 cloves of garlic – crushed.
  4. You need of Ginger – sliced.
  5. Prepare of Salt.
  6. It’s of Pepper.
  7. It’s of Sugar.
  8. You need 1500 ml of water for chicken stock.
  9. You need 10 pcs of small dried Shiitake mushroom (optional).
  10. You need of Tofu skin (optional).
  11. It’s 2 tbsp of soy sauce.
  12. It’s 3 tbsp of sesame oil.
  13. It’s 3 cup of jasmine rice.
  14. Prepare 650 ml of chicken stock.
  15. It’s 3 tbsp of vegetable oil or olive oil.
  16. Prepare 1 pc of cucumber.

Hainanese Chicken Rice step by step

  1. Put the dried Shiitake mushroom in water – leave overnight.
  2. Wash the chicken and sprinkle with lemon juice.
  3. Sauteed the garlic with a little bit of oil, add ginger, some salt and pepper.
  4. Add chicken to the cooking pot.
  5. Add 1500ml boiled water to the pot, some salt and pepper to taste.
  6. Boiled for at least 2 hour to make a chicken stock with low medium fire.
  7. Slice the mushroom into small pcs also the tofu skin.
  8. Rinse the rice and add some sliced mushroom and tofu skin into the rice cooker. Add 650 ml chicken stock into it..
  9. Remove and drain the chicken from chicken stock.
  10. Pre-heat the oven in 160 C.
  11. Brushed the chicken with mixed sesame oil and soy sauce.
  12. Oven for around 15-20 minutes in 160 degree Celcius.
  13. Serve the rice, chicken with some slice of cucumber and chicken stock at side.
